Steps
- 1. Use 2g of salt to rub the chicken's skin evenly and refrigerate for 20 minutes;
- 2. Add 16g salt, 60g chicken oil, 2500g water for every 500g of old hen, simmer for 60 minutes;
- 3. Soak the Yang rice noodles in warm water for 8 hours and set aside;
- 4. Scoop 400g of old chicken soup from a noodle bowl and set aside;
- 5. Cook 65g chicken nuggets, 260g red rice noodles, 3 green vegetables, and 20g egg skin in boiling water for 15 seconds, remove, put it in a noodle bowl, and sprinkle 3g chopped green onion to produce.
