Shiitake mushroom chicken noodle soup

Steps
- 1. Use 2g of salt to rub the chicken's skin evenly and refrigerate for 20 minutes;
- 2. Add 16g salt, 60g chicken oil, 2500g water for every 500g of old hen, simmer for 60 minutes;
- 3. Cook 110g of noodles in boiling water for 4 minutes;
- 4. Take 65g old hen nuggets, 1 mushroom, 3 green vegetables and 20g egg skin and blanch it in boiling water for 30 seconds;
- 5. Scoop 500g of old chicken soup into a noodle bowl and add the cooked noodles and side dishes.
