Hi Hi Pot (Sauerkraut Fish Rice Noodles)

Ingredients




  • Rice Noodles

  • Little choy cabbage

  • Basa Fish Fillets

  • Bean Rice Bone Soup Seasoning (Bean Rice, Lard, White Sugar, Pork Bone, etc.) (from Zhejiang Jinwei)

  • Pickled pepper seasoning (from Chengdu Shengen Biology)



Steps




  • 1. Prepare 10 portions of rice noodles soup base: 3500g add 400g bean rice bone soup seasoning and 350g pickled pepper seasoning to boiling water, stir well and set aside;

  • 2. Add 420g rice noodles and soup base to boil in the milk pot, add 70g small citrus cabbage and bring to a boil;

  • 3. Add 120g of fish fillets to boil and cook for 2 minutes, pour into a red base pot;

  • 4. Cook 250g of wet rice noodles in boiling water for 2 minutes and 30 seconds, pour it into a red base pot for production.

  2. 奶锅中加入420g 米线汤底烧开,下入70g 小叶酸菜,烧开;

  3. 下入120g 鱼片烧开后煮2 分钟,倒入红底座锅中;

  4. 将250g 湿米线在沸水中煮2 分30 秒后,倒入红底座锅中出品。
