Steamed shrimp eggs

## Raw materials:
- egg
- Chicken oil
- Clear sauce
- Salt
- Broad bean sauce
- Shrimp
- Steamed fish soy sauce
- Sesame oil
- Onion Flowers
Steps
:- 1. Prepare egg liquid: Beat the eggs into egg liquid, then mix 600g egg liquid, 30g chicken oil, 10g clear sauce, 17g salt, 1700g water, and 30g broad bean paste and stir evenly with an egg whisk until the egg white and egg yolk are completely broken;
- 2. Filter the egg liquid: Use a filter to filter out the residue of broad bean paste;
- 3. Steam the egg liquid: After steaming the steamer, steam for 5 minutes and simmer for 1 minute;
- 4. Steam shrimp: After steaming in the steamer, steam for 15 minutes;
- 5. Finally, add 1 steamed shrimp on top of the steamed eggs and drizzle them with 3g steamed fish soy sauce and 2g sesame oil.

- 虾仁蒸制:蒸柜上汽后,蒸 15 分钟;
- 最后在蒸制好的鸡蛋上面,加入 1 颗蒸熟的虾仁,淋上3g蒸鱼豉油、2g芝麻香油。
