Braised chicken legs

Ingredients



  • Brine

  • Braised oil (soybean oil, pepper, chili pepper, ginger, etc.) (The same braised ingredients come from Chengdu Shengen, Sichuan Xinyaxuan, Sichuan Jiajia Baiwei)

  • Braised chicken legs (pipa legs) (Marinated, blanched, braised, and quick-frozen in the central kitchen. The detailed ingredients, ratios and steps are not announced by Laoxiang chicken. Please adjust the appropriate amount according to your personal taste)



Steps



  • 1. Put 5000g water, 500g halogen and 500g halogen oil into the stainless steel drum. After boiling over high heat, remove the slag and set aside;

  • 2. Put the thawed braised chicken legs into the braised soup, bring to a boil over high heat and turn to low heat for 5 minutes, turn off the heat and simmer for 5 minutes.

步骤



  1. 在不锈钢桶中放入 5000g 水、500g 卤料和 500g 卤油,大火烧开后,捞出料渣,备用;

  2. 解冻后的卤鸡腿放入卤汤中,大火烧开后转小火卤 5 分钟,关火焖 5 分钟。
