Ingredients




  • Handmade noodle

  • Green vegetables

  • Tea Egg

  • Fried steak (from Sushi, Huaian, Jiangsu)

  • Brine

  • Braised oil (soybean oil, pepper, chili pepper, ginger, etc.)

  • Cooked lard

  • Salt

  • Soy

  • Garlic



Steps




  • 1. Large-scale braised rice:


① Put 5000g water, 500g halogen and 500g halogen oil into the stainless steel drum, and then boil over high heat and remove the slag;
② Put the thawed large fried rice into the braised soup, boil over high heat and turn to low heat and brine for 10 minutes, turn off the heat and simmer for 5 minutes.

  • 2. Prepare 10 portions of noodles soup base: Add 3500g of water to a stainless steel bucket and bring to a boil, add 150g of cooked lard, 30g salt, and 10g of soy sauce to boil, keep warm and set aside;

  • 3. Cook 110g of handmade noodles and 3 green vegetables in boiling water for 3 minutes;

  • 4. Scoop 350g of noodles soup base into a noodle bowl, and then add the cooked noodles;

  • 5. Put 1 large strip, 3 vegetables and half a braised egg on the noodles, add 30g braised soup, and sprinkle 5g of garlic to produce.

步骤




  1. 大排卤制:


①在不锈钢桶中放入5000g 水、500g 卤料和500g 卤油,大火烧开后,捞出料渣;
②解冻后的油炸大排放入卤汤中,大火烧开后转小火卤制10 分钟,关火焖5 分钟。

  1. 10 份面条汤底配制:不锈钢桶中加入3500g 水烧开,下入150g 熟猪油、30g 盐、10g 老抽烧开,保温备用;

  2. 将110g 手工挂面和3 颗青菜在沸水中煮3 分钟;

  3. 舀取350g 面条汤底放入面碗中,再放入煮好的面条;

  4. 将1 块大排、3 颗青菜、半个卤蛋放于面条上,加入30g卤汤,撒入5g 蒜花出品。
