Spicy beef noodle

Ingredients




  • Hand-rolled noodles

  • Spicy beef (beef brisket)

  • Tea Egg

Steps




  • 1. Soup base preparation: Add 150g beef noodle soup, 20g ginger slices, 10g shallots, 5000g water to boil and cook for 20 minutes, remove the residue and set aside;

  • 2. Bring the spicy beef to a boil over high heat, turn to low heat and simmer for 5 minutes;

  • 3. Put 220g of hand-rolled noodles and 3 green vegetables in boiling water and cook for 2 minutes;

  • 4. Scoop 350g of soup base into a noodle bowl and put the cooked noodles;

  • 5. Place 50g of beef, 3 green vegetables and 1 braised egg on the noodles, pour 150g of beef soup, sprinkle 10g of garlic and 5g of minced coriander.

步骤




  1. 汤底调制:将150g 牛肉面汤料、20g 姜片、10g 香葱、5000g水,烧开后煮20 分钟,捞渣备用;

  2. 香辣牛肉大火烧开,转小火焖煮5 分钟;

  3. 将220g 手擀面和3 颗青菜放入沸水中煮2 分钟;

  4. 舀取350g 的汤底于面碗中,放入煮好的面条;

  5. 将50g 牛肉、3 颗青菜、1 个卤蛋摆放于面条上,浇上150g牛肉汤,撒上10g 蒜花和5g 香菜末出品。
