Ingredients




  • Handmade noodles (Hefei Wushan, Jinzhai Xianhui, Shaanxi Jinsha River)

  • Garlic

  • Cooked lard

  • Straw mushroom soybeans



Steps




  • 1. Preparation of base soup: Add 3500g of water to the stainless steel bucket, boil the water and add 150g cooked lard, 30g salt, 50g chicken essence, and 10g dark soy sauce and stir evenly, boil again and turn to 80℃ to keep warm and set aside;

  • 2. Take 15g of green garlic flowers in a noodle bowl, pour 350g of base soup, put 110g of hang noodles into the noodle basket and cook for 4 minutes, remove and drain and pour into the bowl.

  1. 底汤制作:不锈钢桶内加入3500g 水,将水烧开后加入150g 熟猪油、30g 盐、50g 鸡精、10g 老抽搅拌均匀,再次烧开后关火,转80℃保温备用;

  2. 取15g 青蒜花置于面碗中,倒入350g 底汤,将110g 挂面放入面篓中煮制4 分钟,捞起沥干倒入碗中。
