Ingredients

Steps
- 1. Prepare 10 portions of soup base: Add 50g soup ingredients to 1000g boiling water, stir well and set aside;
- 2. Made of old chicken soup:
① Use 2g of salt to rub the chicken's skin evenly and refrigerate for 20 minutes;
② Add 16g salt, 60g chicken oil, and 2500g water for every 500g of old hen, and simmer for 60 minutes. Set aside.
- 3. Chicken nuggets making:
①Marinate every 500g of chicken with 5g salt, 3g chicken essence, 4g green onion slices, and 2g ginger slices for 20 minutes;
②Put the marinated little hens into the steaming cabinet and steam for 25 minutes;
③Slice the steamed chicken into four portions and set aside.
- 4. Cook 130g of fresh noodles, 1 chicken nugget, and 25g of vegetables in boiling water for 2 minutes;
- 5. Scoop 200g of old chicken soup and 100g of soup base in a noodle bowl, add the cooked noodles and side dishes, and sprinkle with 5g of chopped green onion to produce.

②腌制好的小母鸡放入蒸柜中蒸制25 分钟;
③将蒸制好的鸡分切为四份,备用。
- 将130g 鲜面、1 份鸡块、25g 青菜在沸水中煮2 分钟;
- 舀取200g 老鸡汤、100g 汤底于面碗中,放入煮好的面条和配菜,撒上5g 葱花出品。
